We proudly present our carefully chosen extra thick salted herring roe on kelp. Both sides of the kelp is densely covered naturally by wild spawning herring with their roe. Enjoy their ocean fresh aroma and pleasant crispeness.
How to desalt
- First, the herring roe is soaked in 1L of water with a teaspoon of salt.
- After 2 hours, replace the herring roe in fresh salt water. Repeat these steps 3-4 times. This desalting process allows the excess salt from the herring roe to move into the salt water, while retaining the natural flavour of the herring roe.
- It is a bad idea to do this in pure water since it would result in the removal of the salt only on the outside of the herring roe and would give the herring roe a bitter flavour.
Recipe
Matsumae-Zuke
Mix the herring roe pieces with shredded surume (dried squid) and marinate them in a sauce containing soy sauce, mirin (rice wine).
